Quick and Easy Chicken Salad
This chicken salad is SO quick and easy!
Yet it tastes so good, you’d never know it literally takes just minutes to make.
It’s savory, a little tart from apples and a little sweet from the cranberries. And the pecans give it a bit of a crunch.
The trick is to start with a store-bought roasted chicken. That gives your salad a delicious, elevated flavor. Plus, it will save you all that ‘chicken cookin’ time!
START WITH ABOUT 2 CUPS OF ROASTED CHICKEN BREAST
Shred it into bite sized pieces and put it into a medium-sized mixing bowl.
PEEL AND CORE 1/4 OF A GRANNY SMITH APPLE AND DICE IT INTO SMALL PIECES
Add the apples to the chicken
ADD 2 TABLESPOONS OF DRIED CRANBERRIES TO THE MIXTURE
ADD 1 - 2 TABLESPOONS RAW PECAN PIECES
ADD APPROX 1/3 CUP MAYONNAISE (TO TASTE)
MIX ALL TOGETHER WELL AND ADD SALT AND PEPPER TO TASTE
And that is Quick and Easy Chicken Salad!
Serve on a bed of lettuce or as a sandwich on a croissant or French bread.

Variations:
You can use fresh cooked chicken, or canned chicken in this recipe as well. You might even try it with left over Thanksgiving turkey!
For a lower fat version, substitute 1/2 or all of the mayonnaise with low fat mayo
