Easy Easter Desserts
Are you a pre-planner?
Do you start planning menus and decorating and table settings weeks before your event?
Or are you more of a last-minute-decide-and-put-it-together-and-it all-comes-out-great-in-the-end
kind of person?
I’m definitely the latter.
I’ve always been this way, even in school, I would wait until the day before a project was due to start it. Then I would work feverishly putting it all together and get it done just in time to turn it in.
I don’t know why I’m this way.
I try to be a pre-planner…
I really do…
I’ve planned things out way beforehand but then I just end up getting inspired in another direction and all the planning goes out the window and at the last minute, I do something completely different than what I originally was going to do!
I guess I just work best with a looming deadline…
So just in case you’re a little like me and haven’t completely planned everything out — here are some ideas for a few easy Easter desserts you can make the day before:
CREAM CHEESE PIE
You guys — this cream cheese pie is like the creamiest cheesecake you have ever tasted! I took it to our friend’s house for dinner and they both had seconds, they loved it so much.
It does need to refrigerate for several hours so it’s best if you make it the day before (plan ahead!)

EASY PEANUT BUTTER PIE
This peanut butter pie literally takes about 10 minutes to throw together. And it’s one of my family’s favs!

LEMON SURPRISE BARS
I got this lemon bars recipe from my good friend whose mom used to make them. They’re so quick and easy to make. And they’re SO yummy! Serve them with a little whipped cream on top and they’ll add a fresh Spring time flavor to your easy Easter desserts menu.
Here’s how to make them:
Make a graham cracker crust in an 9 x 9 glass dish
Stir together:
2 14 oz. cans sweetened condensed milk
1 1/2 cups fresh lemon juice (Meyer lemons are the best for this!)
4 egg yolks, slightly beaten
lemon zest (optional)
Pour over the graham cracker crust and bake at 350 for 25 minutes.
Freeze for about 3 hours to set, then refrigerate.
Cut into squares and serve cold.
