Roasted Beet And Spinach Salad

Or are you team, ‘No thanks, they taste like dirt!’

I sure hope you’re team‘Yes!’ because I’ve been enjoying coming up with a lot of new recipes lately in my new kitchen and this roasted beet and spinach salad is one of my favorites.

It’s the perfect thing for a late Summer or early Fall meal — just add a piece of grilled salmon or chicken on the side, and you’re good to go!


Here’s how quick and easy it is to throw together a roasted beet and spinach salad:

INGREDIENTS:

1/2 Medium Roasted Beet

3 - 4 Cups Baby Spinach

3 TBSP Crumbled Goat Cheese

1 - 2 TBSP Pecan Pieces

1 - 2 TBSP Dried Cranberries

2 - 3 TBSP Brianna’s Creamy Balsamic Dressing (to taste)

  1. ROAST YOUR BEETS

Roasting beets is super-easy — cut the stems, leaves, and roots off and wash them. You don’t need to peel them. Put them on a piece of foil large enough to wrap them and drizzle with about a teaspoon of olive oil.

Wrap the foil around them and twist the ends.


Cook them in the oven or on the grill with the lid closed. Cooking time and temperature is not critical — you can cook them at 400 degrees for less time or 350 degrees for longer. Just cook them until they are fork-tender. (A medium sized beet will take about 30 minutes in a 400 degree oven.)

In the summer, we like to cook them outside on the grill so we don’t have to heat up the oven in the house. If you cook them on the grill, put them on the top rack, turn them every so often and keep the lid closed.


2. PEEL THE BEETS

Once the beets are roasted, they will be really easy to peel. Simply scrape the peel right off with a sharp knife.

3. DICE THE BEETS

Cut the beet into bite sized pieces.

4. ADD SPINACH TO A BOWL

5. ADD GOAT CHEESE TO THE SPINACH

6. ADD THE BEETS

7. ADD THE PECANS AND CRANBERRIES

8. ADD THE DRESSING

Toss to cover all ingredients and serve.

Be sure to dig down to the bottom, because that’s where all the goodies seem to end up!

This roasted beet and spinach salad recipe will make 2 - 3 servings.
