Artichoke Quesadillas

Oh good —
I’ve got one for you!
We’re still knee-deep in our kitchen remodel (for more about that, read THIS) so I’m looking to keep our meals as simple as possible right now.
This is one of my go-to dishes when I want something
that’s ready in minutes
but is a little more elevated
than just your everyday sandwich or grilled cheese.
Here’s what you’ll need:
4 flour tortillas
1 jar or can of plain (not marinated) artichoke hearts, well-drained
3 ripe red tomatoes, sliced
1 cup shredded Mozzarella or Jack cheese
granulated garlic, salt and pepper to taste
olive oil for grilling
And here’s how to make them:
Add a layer of cheese to one side of a flour tortilla.
Layer 1/4 of the jar of artichoke hearts over the cheese.
Sprinkle granulated garlic over the artichoke hearts to taste.
Add salt and pepper if desired.
Layer sliced tomatoes over the artichokes.
Add another layer of cheese.
Fold the tortilla in half over the ingredients
and brush a small amount of olive oil on the side facing up.
Preheat an iron skillet on medium for a couple of minutes
Place the quesadilla in the skillet with the oiled side facing down
and grill until the tortilla is lightly browned and the cheese is melted.
Brush the remaining top side of the tortilla with a little oil
and flip it over to grill that side
Remove from the pan when both sides are golden brown, the cheese is melted and the quesadilla is heated through.
Repeat with the remaining tortillas, cheese, tomatoes and artichokes.
And that’s all there is to it!
These artichoke quesadillas are a delicious twist on a traditional quesadilla
and are perfect for brunch, lunch or a light dinner.
And they’re especially good with homegrown tomatoes right out of your garden!
